What makes the work created by Kaufmann special is her choice of the medium she uses to express her creativity. Here is the hint: she is also known as 'the cheese lady'. So did you get the medium she uses? She uses cheese as her canvas. Yes you got it right, she uses cheddar cheese to create sculptures and the results are quite impressive.
